Join master Meat Cutter, Donald, F. Palmer, Jr. at Happy Valley Processing, Inc. / Ole Timey Meat Shop for an afternoon of hands on butchering in a federal inspected facility. Each class is intentionally small in order to maintain a small setting between the meat cutter, animal and students. We use whole animals from our own farm and local farms that use our own standards. All students will be supplied a smock and knife during the class. We will be working in a professional slaughter house, so please come prepared by wearing flat shoes and the appropriate attire.

Cancellation Policy: There will be a 50% tuition charge if you cancel within five days of the class you have enrolled in. There will be no refund for cancelations with les than 48 hours notice or for no shows.

If a class is cancelled, refunds will be paid in full or you may reschedule attendance in the next available class.

Sausage 101 Class
This class will Introduce you to the wonderful world of sausage making thru the eyes of an experienced meat cutter. With 6 spots available per class, each student will learn about the techniques and equipment necessary to make quality products. At the end of the class, we will taste what we have created and pack up 12+ pounds of handmade sausage per student. These sausages include Happy Valley’s own sausage recipe, Cajun and mild Italian which will be made during this class.

Whole Hog Class 
In this class we begin with a 200 pound pasture raised hog and spend the next three hours breaking It down into primal cuts and beyond. Each student gets hands on experience and Instruction. Leaving with the knowledge base you need to begin your own butchering practices. Take home portions will include 15-20 pounds of delicious pork per student. Class spots are limited to 6 people and available on a first come, first serve basis via the phone.

Both classes are 3 hours and will take place from lPM to 4PM.
